A Painter’s Pallet of Greens

I am constantly asked about foods and I have published about them in this blog, before. But a friend of mine texted me and told me she was anemic. We had a quick back-and-forth of the brainwashing she had received from Western medicine of what, and how, to eat. I kept saying dark leafy greens, and finally decided to write about it here.

I recommend a green drink , made with Kangen Water®, for breakfast, with a tall glass of Kangen Water®, with perhaps an egg on a bed of greens.

In the morning, you are breaking fast and it is more important than ever to drink and eat green!

For lunch I recommend a large salad as a bed of greens for a small (fits in the palms of your hand) serving of protein, and a serving of quinoa or brown rice, and some sautéed greens, with a large serving of sprouts, and another green drink.

For dinner I recommend a stir fry rice full of veggies, a salad, green drink, and a tall glass of Kangen Water® an hour before and after each meal.


Dark green lettuces include arugula, romaine, green leaf, and butterhead. These nutrient-dense leaves are crisp, and often times slightly bitter, they are often used to make raw salads. Dark lettuces are rich in vitamins A, C and K; eating them regularly can improve your bone health, eyesight, and skin elasticity while aiding your blood in normal clotting. Combine these leaves with tomatoes, onions, turnips, asparagus, beets, celery, carrots, and cucumbers to create a colorful, healthy salad. Add a serving of fermented veggies to the side, at every meal for digestion health. 

Kale, mustard greens, collard greens, cabbage, and broccoli are cruciferous leafy greens and are hard on those of us with thyroid problems, so make sure you sauté them, or blend them before you eat them if you have hypothyroidism. Cruciferous vegetables are high in nutrients and contain glucosinolates, which inhibit the growth of certain cancers. Magnesium and tryptophan are also abundant in these greens; these minerals enhance heart health and brain function. Cook these greens separately, or combine them to create a colorful and flavorful blend.

Add these greens to soups, or or gluten free pasta, and sauté them with your favorite fresh herbs and seasonings.

I buy fresh herbs seasonally, and dry them, and mix them to make lovely seasonal blends. Sometimes I add chile and salt to my herb blends.

Also, take those same herbs and blend them in the blender with a little bit of Kangen Water®, a whole organic lemon, lime, and salt and make a lovely dressing. 

Swiss chard and spinach are vibrant leaves with great colors. They belong to a family of leaves called Amaranthaceae and are similar in taste and nutritional value. Spinach and chard are available throughout the year, and both are rich in iron, which carries oxygen to the blood.

Include these leaves in your raw salads, or chop, blend them with Kangen Water® to make a soup, steam and season them lightly to create a delicious side dish.

Dandelions, red clover, plantain, watercress, and chickweed are edible green leaves. They are sold in some supermarkets, but you are likely to find them growing freely around your neighborhood, in your yard, and at your farmer’s market. Most people destroy them with weed killers and herbicides, but these leafy greens are quite flavorful and nutritious. Red clover regulates hormones and chickweed has anti-inflammatory properties.Dandelion greens promote a healthy liver, and plantain and watercress keep skin cells healthy. Add these greens to raw salads, stir-fries or soups. Make your soups with greens, onion, garlic, and your favorite herbs in a VitaMix, with Kangen Water®.

When you have a friend, relative, or prospect, who needs Kangen Water®, there are several steps to take, in a specific order. 

1. Go to google and look up Kangen (and the) zip code. That is just 2-pieces of information. Try to locate 2-4 people in the area of your search . 

2. Phone those 2-4 people, one at a time, until you find someone who is willing to share the water. Get their terms for water sharing, how many weeks, that they’ve seen a demo or watched the video, about the bottles, and what they want in exchange, if you make that sale.

The Scientific Explanation of Electrolyzed Water: Ionized Alkaline Water

Water, well known as a necessity for life, consists partially of hydrogen. At least 60 percent of the human body is made of water; even bones contain small amounts. The body requires water for functions such as toxin and waste elimination, eating and digestion, lubrication of tissue and organs and conduction of electrical impulses. Without water, the body ceases its functioning within days.

Energy is Adenosine triphosphate, or ATP, is a nucleotide produced in the mitochondria of cells. Providing our bodies with energy at the cellular level, it is partially composed of hydrogen. Every action in the human body, from metabolism to DNA replication to simply standing upright, derives its “fuel” from ATP. Each cell contains more than a million ATP molecules, a number that demonstrates its importance in the body.

pH is the concentration of hydrogen ions, or pH, in the body is a reflection of the alkaline and acid in the fluids of the body. Ideally, these should be balanced within each system of the body; little room for fluctuation exists. However, each system has its own range. Proper pH assists in physiologic tasks such as cellular function, disease inhibition, mineral balance, respiration and kidney function.

According to Dr. Patrick Flanagan, hydrogen may also be the missing link in slowing down the aging process. The aging of tissues in the body is believed to be caused by substances called free radicals in the body. Inside many of the tissues in the body are stored (pooled) supplies of hydrogen. According to Dr. Flanagan, this hydrogen protects us from free radical damage. Unfortunately, as we age, these storages dry up. This leaves the tissue exposed to free radicals, which leads to the tissue damage seen with aging.”


Hydrogen peroxide (H2O2) is widely regarded as a cytotoxic agent whose levels must be minimized by the action of antioxidant defence enzymes. In fact, H2O2 is poorly reactive in the absence of transition metal ions. Exposure of certain human tissues to H2O2 may be greater than is commonly supposed: substantial amounts of H2O2 can be present in beverages commonly drunk (especially instant coffee), in freshly voided human urine, and in exhaled air. Levels of H2O2in the human body may be controlled not only by catabolism but also by excretion, and H2O2 could play a role in the regulation of renal function and as an antibacterial agent in the urine. Urinary H2O2 levels are influenced by diet, but under certain conditions might be a valuable biomarker of ‘oxidative stress’.

Simple elixir called a ‘miracle liquid’, FEBRUARY 23, 2009

It’s a kitchen degreaser. It’s a window cleaner. It kills athlete’s foot. Oh, and you can drink it.

Sounds like the old “Saturday Night Live” gag for Shimmer, the faux floor polish plugged by Gilda Radner. But the elixir is real. It has been approved by U.S. regulators. And it’s starting to replace the toxic chemicals Americans use at home and on the job.

The stuff is a simple mixture of table salt and tap water whose ions have been scrambled with an electric current. Researchers have dubbed it electrolyzed water — hardly as catchy as Mr. Clean. But at the Sheraton Delfina in Santa Monica, some hotel workers are calling it el liquido milagroso — the miracle liquid.

That’s as good a name as any for a substance that scientists say is powerful enough to kill anthrax spores without harming people or the environment.

Used as a sanitizer for decades in Russia and Japan, it’s slowly winning acceptance in the United States. A New York poultry processor uses it to kill salmonella on chicken carcasses. Minnesota grocery clerks spray sticky conveyors in the checkout lanes. Michigan jailers mop with electrolyzed water to keep potentially lethal cleaners out of the hands of inmates.

In Santa Monica, the once-skeptical Sheraton housekeeping staff has ditched skin-chapping bleach and pungent ammonia for spray bottles filled with electrolyzed water to clean toilets and sinks.

“I didn’t believe in it at first because it didn’t have foam or any scent,” said housekeeper Flor Corona. “But I can tell you it works. My rooms are clean.”

Management likes it too. The mixture costs less than a penny a gallon. It cuts down on employee injuries from chemicals. It reduces shipping costs and waste because hotel staffers prepare the elixir on site. And it’s helping the Sheraton Delfina tout its environmental credentials to guests.

The hotel’s kitchen staff recently began disinfecting produce with electrolyzed water. They say the lettuce lasts longer. They’re hoping to replace detergent in the dishwasher. Management figures the payback time for the $10,000 electrolysis machine will be less than a year.

“It’s green. It saves money. And it’s the right thing to do,” said Glenn Epstein, executive assistant at the Sheraton Delfina. “It’s almost like fantasy.”

Actually, it’s chemistry. For more than two centuries, scientists have tinkered with electrolysis, the use of an electric current to bring about a chemical reaction (not the hair-removal technique of the same name that’s popular in Beverly Hills). That’s how we got metal electroplating and large-scale production of chlorine, used to bleach and sanitize.
It turns out that zapping salt water with low-voltage electricity creates a couple of powerful yet nontoxic cleaning agents. Sodium ions are converted into sodium hydroxide, an alkaline liquid that cleans and degreases like detergent, but without the scrubbing bubbles. Chloride ions become hypochlorous acid, a potent disinfectant known as acid water.

“It’s 10 times more effective than bleach in killing bacteria,” said Yen-Con Hung, a professor of food science at the University of Georgia-Griffin, who has been researching electrolyzed water for more than a decade. “And it’s safe.”

There are drawbacks.

Electrolyzed water loses its potency fairly quickly, so it can’t be stored long. Machines are pricey and geared mainly for industrial use. The process also needs to be monitored frequently for the right strength.

Then there’s the “magic water” hype that has accompanied electrolyzed drinking water. A number of companies sell so-called ionizers for home use that can range from about $600 to more than $3,000. The alkaline water, proponents say, provides health benefits.

But Richard Wullaert, a Santa Barbara consultant, said consumers should be careful.

“Some of these people are making claims that will get everybody in trouble,” said Wullaert, whose nonprofit Functional Water Society is spreading the word about electrolyzed water. “It’s time for some serious conferences with serious scientists to give this credibility.”

Most of the growth has happened outside the United States.

Russians are putting electrolyzed water down oil wells to kill pesky microbes. Europeans use it to treat burn victims. Electrolyzing equipment is helping to sanitize drinking water in parts of Latin American and Africa.

It’s big in Japan. People there spray it on sushi to kill bacteria and fill their swimming pools with it, eliminating the need for harsh chlorine. Doctors use it to sterilize equipment and treat foot fungus and bedsores. It’s the secret weapon in Sanyo Electric Corp.’s “soap-less” washing machine.

Now Sanyo is bent on cleaning up Japan’s taxis with a tiny air purifier that fits into a car’s cup holder. The device uses electrolyzed water to shield passengers from an unwelcome byproduct of Japan’s binge-drinking business culture: vomit.

“There was some concern about the spreading of viruses and bacteria via the taxi, not to mention the . . . stinky smells,” Sanyo spokesman Aaron Fowles said.

Sanyo’s taxi air washer isn’t yet available in the U.S.; commuters will have to hold their noses for now. But the U.S. Department of Agriculture, the Food and Drug Administration and the Environmental Protection Agency have approved electrolyzed water for a variety of uses.

PuriCore of Malvern, Pa., and Oculus Innovative Sciences of Petaluma, Calif., have developed treatments for chronic wounds. Albuquerque, N.M.-based MIOX Corp. sells municipal water-purifying systems. EAU Technologies Inc. of Kennesaw, Ga., caters to both ends of a dairy cow, with alkaline water to aid the animal’s digestion and acid water to clean up its manure.

Integrated Environmental Technologies Inc. of Little River, S.C., is working with oil companies to keep wells free of bacteria and with high schools to sanitize sweaty wrestling mats and grungy football equipment that spread skin infections.

Electrolyzer Corp. of Woburn, Mass., is going after the hospitality market. The Sheraton Delfina purchased one of its machines. So has the Hyatt Regency Chicago and the Trump International Beach Resort near Miami.

Patrick Lucci, Electrolyzer’s vice president of marketing, likes to bombard prospects with scientific studies, then give ’em the old razzle-dazzle. He’ll swig the processed salt water before he mops the floor with it.

“Try that with bleach,” he said.

The unit in Santa Monica looks a little like an oversized water heater, with two tanks side by side — one for making the hypochlorous acid sanitizer, the other for the sodium hydroxide cleanser.

Rebecca Jimenez, director of housekeeping, heard grumbling from the cleaning staff when the hotel brought the machine in last fall. Housekeepers doubted that the flat, virtually odorless liquids were really doing the job. Some poured the guest shampoos into their bottles to work up a lather.

“If it doesn’t suds up, it doesn’t work,” Jimenez said. “That’s the mentality.”

Still, she said, most have come around and are enjoying working without fumes and peeling skin.

Minnesota food scientist Joellen Feirtag said she was similarly skeptical. So she installed an electrolysis unit in her laboratory and began researching the technology. She found that the acid water killed E. coli, salmonella, listeria and other nasty pathogens. Yet it was gentle enough to soothe her children’s sunburns and acne.

She’s now encouraging food processors to take a look at electrolyzed water to help combat the disease outbreaks that have roiled the industry. Most are dubious.

“This sounds too good to be true, which is really the biggest problem,” said Feirtag, an associate professor at the University of Minnesota. “But it’s only a matter of time before this becomes mainstream.”


Understanding the Affect of Food and Kangen Water®

Fermenting & Sprouting with Kangen Water®

On Spiritual Challenges

I’m always asked about my fermenting, sprouting, raw, green-drink, and healthy cooking classes. I teach in my store primarily, but I also teach privately.

This last December, 2014, I was yelled at, in the Lady’s Room, at a company event, for being selfish, and not teaching my classes at their corporate offices, and only at my store.

I felt some truth to what she said, but I have principle issues with lack of following one’s own corporate Policies. But, since it is the best product on the market, I decided to teach. This is no olive branch, I’m just a more evolved spirit than corporate dogma, it’s about people, and teaching ancient traditional healing techniques.

I taught last Thursday, and I learned that I cannot have a font smaller than 22 in my PowerPoints, and that I need to insert jokes (of man!).

There was a heckler in the crowd. He wanted to taste the tomatoes. It’s really funny, since so many of us are thirsty for something new, and in the end it’s about people, and teaching ancient traditional healing techniques.
